We're going camping and it would be sooo convienent to cook the noodles before we go. We're going to Lake Havasu, AZ. and for some reason, water takes forever to boil there. (In a motorhome ) I've already cooked and froze the sauce. If I cooked them very al dente, rinsed them really well, and stored them in a plastic bag, would that work? Do you think they would keep for a week? Would it work if I froze them? I really don't want to get anyone sick. I'm cooking for 38 people, and am trying to get as much done before as I can.
Thanks in advace for the advice. You always come through for me. :)

NO MORE than a week. i would say 5 days to keep it on the safe side.

Why rinse? Really. If you don't, they might stick together. If you do, they will be wet and will freeze with ice crystals all through them. Your plan will work just fine, if you don't wash the nutrients out of clean food. (You are not a raccoon.) Italians drain spaghetti, they don't wash it. Asians do not wash rice, they STEAM it, which removes ALL loose water. If it was dirty, you should've dealt with that before cooking – if not, why all the washing? Makes no sense.

And – store them in a air-locking-sealed plastic bag. That DOES make a difference. You must freeze them, too.

Also, if you have a microwave, this might be a good time to use it. (I don't like the whole idea of nuking food, but I am a minority, and you are camping.)

Just a thought – you might want to take a couple bunches of cilantro or other favorite herb, to toss bits into the dish before serving, or use as garnish. (Always remove twist-ties and rubber bands; rinse off all dirt, drain, and tie top of bag in a knot but LEAVE AIRSPACE in the bag.) Don't ask me why, but your fresh produce will last much longer that way.
